These chipotle shredded chicken tacos were absolutely amazing! I didn’t take any pictures as I didn’t think I would share this recipe, but I figured, why not?
I absolutely love my crockpot. I’m so glad that I finally got one. I’ve been using it quite a bit. I’m thinking of making Paleo Chili for dinner tonight or tomorrow! But one of my favorite recipes thus far has been the Chipotle Shredded Chicken Tacos. I just threw this together not really following a recipe.
Brodey, my 8 year old is absolutely picky. It’s very hard to get him to eat foods that didn’t come out of a drive thru or frozen box. But he ate THREE of these tacos. He loved them so much and has asked me to make them again!
It makes me so happy when I find a new recipe that’s a big hit with my family!
-What You Need-
4-5 skinless, boneless chicken breasts
1 can of La Costena Chipotle Peppers in Adobo Sauce, diced
3-4 cloves of garlic, minced
1/2 medium yellow onion, diced
pinch of sea salt
pinch of pepper
Corn soft taco size tortillas
-What To Do-
Lay the chicken breast in the bottom of your crockpot. open the can of chipotle peppers and dice them, dice the onion, mince the garlic and add it all to the crock pot.
Then add your pepper, salt, and taco seasoning. Cut your lime in half and squeeze the juice into the crockpot.
If it looks too dry at this point, you can add 1/4 cup of water.
Let it cook on low for 8 hours or high for 4 hours.
Once done, remove the chicken and shred, add to pan or microwaved warmed tortillas and add cheese and salsa if doing so.
